Bombay Mix Cookie Cake

This is a sweet and salty, and spicy cake! It's the perfect snack and a great way to use up the half eaten Bombay mix. Thank you to the chocolate chip cookie book by Carey Jones and Robyn Lenzi for the basic recipe.


Ingredients


140g Plain Flour

1/4 tsp bicarbonate of soda

1/2 tsp salt

100g White Sugar

100g Brown Sugar

1 egg

1 tsp Vanilla Extract

85g Chocolate Chips

85g Bombay Mix



Method


Step One

Preheat the oven to 180 C, gas mark 4 and grease a round cake tin.


Step Two

Mix your flour, b. soda, salt, sugars, egg and vanilla extract together in a bowl until they care creamy.


Step Three

Fold in the chocolate and Bombay mix.


Step Four

Pour mixture into cake tin and bake for 20-25 minutes, or until golden brown.


Step Five

Leave in the cake tin until cool.



This is the cake to drink with a cool glass of milk - it's pretty punchy!
