Plum and Almond upside down Cake

A warm spice cake made with plums from the market.


Ingredients:


Topping:

4 to 5 ripe plums stoned and sliced

A handful of flaked almonds

50g butter

50g brown sugar


Cake:

2 eggs weighed

The same weight of:

Butter

Brown sugar

50g ground almonds

65g self raising flour

1 teaspoon baking powder

1 teaspoon ground coriander

1 teaspoon ground cardio on

1 teaspoon mango powder


Method:


Step One:

Grease and line a cake tin with grease proof paper and pre heat the oven to 180c / gas mark 4.


Step Two:

Heavily butter the tin and sprinkle the brown sugar and flaked almonds on to the butter. Place the plum slices in a patten.


Step Three:

Next, weigh the eggs and put in the butter and sugar weighed at the same amount with the flour , almonds and spices and baking powder.


Step Four:

Beat until smooth and fluffy and pour onto the prepared plums.


Step Five:

Place in the oven and bake for 25 to 35 minutes, or until golden brown and cake tester comes out clean.


Step Six:

Take out and leave for 5 minutes, then turn out on to a cooling rack, and if desired sprinkle with a little demarcation sugar and sumac for zing.


Serve with cream, custard or on its own, and enjoy!
