Flap Jude Biscuits

Inspired by a Mary Berry Recipe. This crumbly, cookie like biscuit is named after my son. You can change up the recipe to whatever cereal, bits and pieces you have in the cupboard.


Ingredients

100g butter softened

150g demerara sugar

75g oats

1 h andful nuts/ raisins/ chocolate chips etc

2 small bananas or 1/2 a large banana’s

Pinch rock salt

1 egg

75g self raising flour


Method


Step One

Set the oven at180c gas mark 4 and grease two large baking sheets


Step Two

Mix all the ingredients in a large bowl until they are mixed to a soft dough.


Step Three

Use a table spoon to create individual blobs of mixture on baking sheets, and press with a spoon to slightly flatten.

Press with a spoon to flatten slightly.


Step Four

Bake in the oven until golden brown, about 10 to 15 minutes.

Transfer to a cooling tray.
