Golden Syrup Sticky Cake

A sticky fudge brownie/ blondie type cake which is even better the next day. Use honey if you don’t have golden syrup or make your own.


Ingredients


100 g Butter

100g Soft Brown Sugar

200 g Golden syrup or honey

200 g Plain flour

1 Free-range Egg

150 ml Yogurt

Topping

50ml/100ml golden syrup

Squeeze of lemon



Method


Step One:

Pre-heat your oven to 160°c (140°c for a fan-assisted oven) and grease & line a cake tin square or round with grease-proof paper.


Step Two:

Place the butter, syrup and sugars into a medium pan and heat gently until the ingredients are just melted together, stirring occasionally. Once melted together, set aside and allow to cool for at least 10 minutes.


Step Three:

In a small bowl/jug, beat the yogurt and egg together. Set aside.


Step Four:

In a large bowl, sift the flour. Add the egg/milk mixture and the cooled syrup mixture and beat until combined and you have a lump free batter.


Step Five:

Pour the mixture into your pre-lined loaf tin and bake in the pre-heated oven for 30 to 35 minutes until golden on top and a skewer inserted comes out clean.


Step Six:

Meanwhile warm the extra syrup in sauce pan and add a squeeze of lemon and when the cake comes out of the oven pour on top straight away and leave cake to cool.
