Kidney Bean Chocolate Cake

Have you still got that tin of kidney beans in the back of your cupboard? This is the perfect cake to use them up!


Ingredients


100g good dark chocolate

400g can red kidney beans, drained and well rinsed

125g brown sugar

75 grams butter

100g plain flour

3 large eggs mortar

pinch of salt flakes

1 1/2 tsp baking powder

1 tsp vanilla extract

100g milk chocolate chopped in to squares


Method


Step One:

Preheat the oven to 180c/Gas Mark 4 and grease a 20cm cake tin and line the base with greaseproof paper


Step Two:

Whip together the butter and sugar


Step Three:

Blend the oil, beans, egg and vanilla essence in a blender.


Step Four:

Melt dark chocolate and cool slightly


Step Five:

Whip the egg mixture into the butter and sugar, add the melted chocolate.


Step Six:

Fold in the flour, salt and baking powder


Step Seven:

Pour the mixture into your cake tin evenly and place the milk chocolate on top in squares or lines


Step Eight:

Bake for 20-25 minutes – or until a cake tester comes out clean, and take out of the oven.
