Brazilian Carrot Cake

Left over carrots? Make them into a carrot cake! Smooth and orangey, its unlike the carrot cake you're used to. This one has chocolate icing and is beloved in Brazil.

Ingredients


Cake

300g carrots, peeled and roughly chopped

250g sugar

200g vegetable oil

250g self-raising flour

1tsp vanilla essence

1sp cardamon (optional)


Chocolate sauce topping

50g coco powder

100g sugar

1 tbsp butter

80ml water


Pre-heat the oven gas mark 4, 180 c.

Grease a cake tin.


Method


Step One

Liquidise the carrots with the oil


Step Two

Beat the eggs and sugar until pale and fluffy and add the carrot/oil mix


Step Four

Fold in the flour and add a teaspoon of baking powder


Step Five

Pour mixture into your greased cake tin and bake or 35 to 45 minutes or until golden.


Step Six

Turn out onto a cooling rack and leave to cool


Step Seven

While your cake is cooling prepare your chocolate sauce; place all your ingredients into a pan and on a low heat slowly stir until all melted together.


Step Eight

Pour chocolate sauce over your cake once cooled
