Tomato Soup Cake

The tomato soup that has been in the cupboard for ages, that no one wants for lunch... it makes a lovely cake. This was developed by a soup company to advertise their soups, but is a well loved cake; deep red, fruity and not like soup at all!
Ingredients
1 tin of tomato soup
1 tsp bicarbonate soda
200g caster sugar
2 eggs
75g butter
1 tsp cinnamon
1/2 tsp all spice
200g self raising flour
145g raisins (or mixed fruit and nuts)
Method
Step One
Grease your cake tin and pre heat the oven to 170 c.
Step Two
Coat your fruit in flower (to stop them sinking to the bottom)
Step Three
Mix together the soup, bicarbonate soda, cinnamon and all spice in a bowl.
Step Four
In a separate bowl, mix your sugar, eggs butter and flour.
Step Five
Add the soup mix into your cake mixture
Step Six
Add the floured raisins and stir them well.
Step Seven
Pour your mix into a cake tin and bake for 35-45 minutes, or until cake tester comes out clean.

Optional Toppings
Orange juice and caster sugar drizzle (put on while cake is still hot)
Cream cheese frosting or icing sugar (leave cake to cool first)
