Chocolate Chickpea Cake

I first saw this in the guardian lifestyle magazine and I've been making it ever since!
Ingredients
200g plain dark chocolate
150g sugar (caster, brown or icing sugar)
150g butter
400g chickpeas
3 eggs
Method
Step One
Melt the chocolate in the microwave for 30 seconds and stir. Continue to do this this until chocolate is completely melted. Otherwise, melt over a pan of simmering water.
Step Two
Drain the chickpeas and whisk with 3 eggs until smooth.
Step Three
Cream together the butter and sugar. Then add the chickpea and egg mix.
Step Four
Stir the melted chocolate into the cake mix. You can add coco powder for a richer taste.
Step Five
Pour the mixture into the a greased tin and bake for 35 minutes (or longer if required).
Step Six
Leave to cool before removing the cake from the tin
Optional Toppings
Coco powder
Lime and sugar drizzle (add when cake is still hot)
Ginger syrup
Melted chocolate
Enjoy!
