Peanut Butter Cookies: Three Ingredient and Gluten Free

These biscuits were in the metro newspaper. A clever and quick way of using up peanut butter... and a gluten free option!
Ingredients
200g peanut butter
175g sugar
1 egg
(Jam is optional)
Method
Step One
Pre heat the oven to gas mark 4, 180 c.
Step Two
Mix together the peanut butter and sugar in a bowl.
Step Three
Add the egg to form a dough.
Step Four
Use a dessert spoon to divide dough into individual cookie portions and roll to form balls. Place each ball on a greased baking tray and flatten with a fork. Another option is to create an indent in each cookie and add a teaspoon of jam.
Step Five
Place the baking tray on the middle shelf of the pre heated oven and bake for 10-12 minutes, or until golden brown.
Step Six
Take out and let them harden for a few minutes before removing them from the tray on the cooling rack.
