Spinach Cake

This is a green, refreshing cake that uses the extra bag of spinach left in the fridge door, the one you bought to be healthy but can't bear anymore salads or stir-fry. It is a Turkish recipe, known as Ispanakli kek.
Ingredients
150-200g spinach
3/4 cup of olive oil
2 tbsp lemon juice
Grated zest of 1 lemon
3 eggs
300g of sugar
1 tsp vanilla essence
3 tsp baking powder
Method
Step One
Pre heat the oven at gas mark 4, 180 c
Step Two
Put the washed spinach and olive oil in a blender and blend until smooth.
Step Three
Whisk the eggs and sugar together until foamy (they should double in size)
Step Four
Fold into the eggs; the spinach mix, the flour, the lemon and the vanilla essence.
Step Five
Pour into a greased cake tin and bake for 35-40 minutes, or until cake skewer comes out clean.
Step Six
Pour lemon drizzle over cake while hot.
